Cheese waffles (aka Chaffles)

  • 2 Tbs. almond flour
  • 1 c. shredded cheese
  • ¼ tsp. baking powder
  • ½ tsp. Italian seasoning
  • ½ tsp. Garlic powder
  • ¼ tsp. salt
  • 2 oz. cream cheese
  • 2 eggs

Preheat the waffle iron.

In a large bowl, mix together the flour, shredded cheese, baking powder, italian seasoning, garlic powder, and salt. Set aside.

Melt the cream cheese on the stovetop over low heat. Take off heat and whisk in the eggs.

Gently stir the wet mix into the flour and cheese mix when the waffle maker is ready. Cook until lightly browned.

Maryland Crab cakes

  • 2 tbsp Mayonnaise
  • 1 tsp. Dijon
  • 1 tsp Worcestershire
  • ½ tsp. Hot sauce
  • 1 tsp Lemon Juice
  • 2 Tbs. Chopped parsley
  • 1 Tbs. green onions
  • 1 Egg
  • 6 oz. lump crabmeat
  • ½ c. almond flour
  • 1 tsp. Old Bay seasoning (homemade, see recipe below)
  • 1/4 tsp Baking Powder

    Mix together the mayonnaise, dijon, worcestershire, hot sauce, lemon juice, parsley, and onions. Stir in the egg. In a separate bowl, mix together the dry ingredients – almond flour, old bay seasoning, and baking powder. Add dry ingredients and the crabmeat to the egg mixture and gently stir until combined. Bake at 400°F for 10-15 minutes, flipping over halfway through bake time. (Used air fryer with parchment paper on bottom).

Homemade Old Bay Seasoning

  • 1 Tbs. celery salt (or 1 Tbs. ground celery seed and 1 Tbs. salt)
  • 2 tsp. ground bay leaves
  • 1 tsp. paprika (smoked or sweet)
  • 1 tsp. ground black pepper
  • 2 tsp. ground mustard
  • 1/2 tsp. allspice
  • 1/2 tsp. cloves
  • 1/2 tsp. ginger
  • ¼ tsp. nutmeg
  • ¼ tsp. cinnamon
  • ¼ tsp. dried and ground chile pepper
  • ¼ tsp. ground cardamom

Candied nuts

  • 2 c. almonds, sliced
  • 1 c. walnuts
  • 1 Tbs. melted butter
  • 1/4 c. maple syrup
  • 1/4 tsp. dried, ground chile peppers
  • 1 tsp. salt
  • 1/4 tsp. black pepper

Bake at 350°F for 7-10 minutes, stirring halfway through the bake time. (used an air fryer and put parchment paper on the bottom of the basket).
