- 4 Garlic cloves, smashed
- 4 chile pequins
- 1 Tbs. coriander
- 2 whole cloves
- 1 inch fresh, grated ginger
- 1 bay leaf
- 1 cinnamon stick (2 inches)
- ½ Tbs. allspice
