Green beans with salt pork

Green beans with salt pork (from Bon Appetit)

  • 2 lbs. fresh green beans, ends trimmed off
  • 8 oz. salt pork, thinly sliced

Place the greens beans and salt pork in a large pot and add water until covered.  Bring to a boil, then turn heat down to simmer for 1 1/2 to 2 hours.  Add water to keep covered while simmering.

  • 2 lbs. figs
  • 2 tsp. lemon zest
  • 4 Tbs. fresh lemon juice
  • 2/3 c. honey

Puree the figs, lemon zest, and lemon juice in a food processor.  Pour into a large pot, bring to a boil, and simmer for 20 min.  Turn off heat, let cool ~10 min., then add the honey and mix well.  Cool then store in clean, glass jar in refrigerator.
