Squash casserole

Squash casserole

  • 2 Tbs. butter
  • 8 c. yellow squash, cut in half lengthwise and sliced
  • 1 onion, sliced thin and chopped
  • 4 eggs
  • 2 c. shredded cheese
  • 2 c. milk (or heavy cream/yogurt/sour cream combo)
  • 0.25 tsp. cayenne pepper
  • 1 tsp. salt

Topping

  • 0.5 c. almond flour
  • 2 Tbs. coconut flour
  • 3 Tbs. dried parsley
  • 0.5 tsp. paprika
  • 1 tsp. garlic powder
  • 0.5 tsp. salt

Preheat the oven to 350 degrees F. Butter a 13×9 glass baking dish. Saute the squash and onions in the butter until soft. Mix together the eggs, cheese, milk, pepper, and salt in a bowl. Pour the squash into the 13×9 greased pan, then pour the egg cheese mix on top. Stir gently until combined. In a separate bowl, whisk together the topping ingredients. Sprinkle over the squash, egg, cheese mix and bake for ~45 min.

Zesty Italian Cauliflower Hash

Zesty Italian Cauliflower Hash (adapted from Cauliflower Fritters @ https://www.allrecipes.com/recipe/221177/cauliflower-fritters/)

  • 1 large head of cauliflower, cut up into small pieces (~6 c.)
  • 0.7 oz packet of zesty italian spice mix packet or made-from-scratch recipe below
  • 1 tsp. baking powder
  • 1/2 c. almond flour
  • 3 large eggs
  • coconut oil

Place small batches of cauliflower pieces into a food processor and process until evenly minced. In a large bowl, combine the cauliflower, spice mix, baking powder, almond flour, and 3 large eggs until mixed through. Cook over medium-low heat with coconut oil until softened (~10 min.), be sure to occasionally stir while cooking to prevent sticking.

Zesty Italian Spice Mix

  • 1 tsp. garlic powder
  • 1 tsp. sea salt
  • 1.5 tsp. onion powder
  • 1 tsp. sugar
  • 1/4 tsp. cayenne
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried basil
  • 1.5 tsp. dried parsley
  • 1/8 tsp. celery seed
  • 1 tsp. cajun seasoning

Cucumber salad dressing

Cucumber salad dressing

  • 1 c. yogurt
  • 2 tsp. rice vinegar
  • 2 tsp. apple cider vinegar
  • 2 tsp. dill
  • 1 tsp. dill seed
  • 1 to 2 tsp. sea salt
  • 1/2 to 1 Tbs. honey

Pour this over sliced cucumbers. I used ~8 from the garden. Let sit about a half hour before eating.

Cranberry Sauce

Cranberry Sauce

  • 24 oz. cranberries, fresh or frozen (wrinkled ones removed)
  • 2 pears or apples, diced
  • 1/4 c. orange juice, freshly squeezed
  • 1 Tbs. orange zest
  • 1/2 c. coconut sugar
  • 1/2 c. dried whole cane sugar
  • 1/2 cinnamon stick
  • 1/2 c. honey or 1/2 c. maple syrup

Mix together the cranberries, pears, orange juice, orange zest, coconut sugar, cane sugar, and cinnamon stick in a stovetop pressure cooker. Cook on high for 7 min. Let release naturally for at least 10 min. Open up and stir in the honey or maple syrup.
