Turkey and sweet potato meatballs

  • 1 lb. ground turkey
  • 1 c. sweet potato, baked and mashed (~3 small)
  • 1 onion
  • 3 garlic cloves
  • ~1/4 c. parsley
  • 1/3 c. whole grain breadcrumbs
  • 1/4 c. cheddar cheese
  • 2 tsp. maple syrup
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Wash, dry, and prick holes in the sweet potato; bake at 375 degrees for about 40 min.  When soft, peel and mash.  Chop onion, garlic, parsley in the food processor.  Add the breadcrumbs and cheese, process some more.  Mix with the raw turkey meat in a large bowl, drizzle with maple syrup and add salt and pepper.  Careful not to overmix.  Bake in 400 degree oven for ~30 min. in two greased 9×13 baking dishes.

Tuna Zucchini Cakes

  • 4 to 8 green onions, minced
  • 2 Tbs. butter
  • 2- 6.5 oz tuna packets (water), drained well and flaked
  • 2 c. zucchini, shredded
  • 4 eggs, lightly beaten
  • 2/3 c. fresh parsley, minced
  • 1 Tbs. lemon juice
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1 to 2 c. whole grain bread crumbs
  • 1/2 tsp. italian seasoning
  • 1/4 tsp. garlic powder
  • 4 Tbs. coconut oil

Saute the green onions in the butter.  Mix together with the rest of the ingredients except for the coconut oil.  Make patties and fry in coconut oil on cast iron.

Good topped with cheddar cheese and avocado.  Serve with salad, cucumber salad, …
