Meat and Tomato Soup

Meat and Tomato Soup (adapted from Venison Italian Soup from allrecipes.com)

  • 1 lb. ground meat (used venison)
  • 1/2 onion, diced
  • 1 large carrot, diced
  • 2 celery, diced
  • 1 (15 oz) can beans (used kidney)
  • 1 c. green beans, cut into 1″ pieces
  • 1 zucchini/squash, diced
  • 1 (15 oz.) can diced tomatoes
  • 1 (15 oz.) can tomato sauce
  • 4 c. broth/water
  • 1 Tbs. beef Better Than Bouillon
  • 2 tsp. dried basil
  • 2 tsp. dried oregano
  • 1 bay leaf
  • 3/4 tsp. sea salt
  • 1 to 2 c. leftover pasta

In a large stovetop pressure cooker, brown the meat. Remove and set aside. Saute the onion, carrot, and celery for a few minutes. Then add the rest of the ingredients except the pasta. Cook at pressure for 6 min. Natural release for 5-10 minutes. Add the pasta while still hot. Optional – add cream to the broth.

Barbecue Pizza Sauce

Barbecue Pizza Sauce (adapted from seriouseats.com)

  • Olive oil
  • 1/2 c. onion, finely chopped
  • 2 cloves/2 tsp. garlic, crushed and minced or 1 tsp. garlic powder
  • 2 15 oz. cans diced tomatoes
  • 3 Tbs. tomato paste
  • 1/3 c. rapadura
  • 1/4 c. honey
  • 1/4 c. apple cider vinegar
  • 2 Tbs. molasses
  • 2 tsp. yellow mustard
  • 2 tsp. Worcestershire sauce
  • 1 tsp. dried oregano

Saute onion in olive oil until soft, about 5 min. Stir in garlic, cook until fragrant (about 30 sec). Add in the remaining ingredients. Bring to a boil, reduce heat to low and simmer ~20 min. Use immersion blender to puree until smooth.

Tomato soup with beans

Tomato soup with chickpeas

  • 2 Tbs. olive oil
  • 2 Tbs. butter
  • 2 onions, chopped
  • 2 carrots, peeled and diced
  • 1/2 tsp. sea salt
  • 2 -28oz. cans of whole tomatoes
  • ~2 c. beans (chickpeas or other), cooked
  • 2 c. chicken stock, water from boiling potatoes, or milk/heavy cream (heated)
  • 3 to 4 Tbs. fresh rosemary, finely chopped
  • 2 Tbs. thyme
  • 1 Tbs. chicken bouillon (better than bouillon)

Saute onion and carrot in olive oil, butter, and salt until soft.  Add the tomatoes, herbs, bouillon, and chickpeas and cook ~10 min.  If adding stock or water, then add now.  Puree with immersion blender.  If adding milk, add after soup is pureed and heat through.

Cucumber and tomato salad (greek style)

Cucumber and tomato salad

  • 2 tomatoes, halved and sliced thin
  • 1 cucumber, peeled, halved, and sliced thin
  • 2 Tbs. capers
  • 2 to 4 Tbs. onion, minced
  • 1/2 tsp. sea salt
  • dash cracked pepper
  • 2 Tbs. oregano, minced
  • 1 1/2 Tbs. lemon luice
  • 2 to 3 Tbs. olive oil

Mix and serve.
