Glazed salmon

  • 2- 6oz. salmon fillets
  • 1 tsp. salt
  • pepper
  • 2 garlic cloves, crushed and minced
  • 1 Tbs. mustard
  • 1 Tbs. honey
  • 1 1/2 Tbs. oil (used avocado oil)

Preheat oven to 400 degrees F. Combine the salt, pepper, garlic, mustard, honey, and oil in a bowl and whisk into a paste. When the oven is preheated, preheat a cast iron pan over medium heat. Add a little oil to the pan. Cover the flesh side of the salmon with the paste and place the fish (skin side down) on the pan until brown. Then place pan in the oven and cook until done (check after 5-7 min).




Zucchini, salmon, and egg pancakes

Zucchini, salmon, and egg pancakes (adapted from Practical Paleo)

  • 2 to 4 Tbs. green onions, minced
  • olive oil
  • 6 eggs
  • 2 Tbs. coconut flour
  • 1 to 2 tsp. dried dill
  • 1/2 tsp. sea salt
  • 2 c. zucchini, shredded and drained
  • 6 oz. can of wild salmon
  • refined coconut oil

Cook the green onions in olive oil for a few minutes over low heat.  Allow to cool.

Beat the eggs with the coconut flour, dill, and salt.  Mix in the shredded zucchini and salmon.  Cook the pancakes over med-low heat, using refined coconut oil to fry.

Salmon and black bean patties

  • 1 Tbs. butter
  • 1/4 c. onion, finely chopped
  • 2 c. black beans, drained
  • 2 -6 oz. cans of salmon, drained
  • 2 Tbs. lemon juice
  • 2 eggs
  • 1/2 tsp. garlic salt
  • 1/2 tsp. italian seasoning
  • 1 tsp. dried dill
  • 2 tsp. dried parsley
  • 1/2 tsp. sea salt

Saute the onions in the butter, then combine with all the ingredients in a large bowl.  Shape into patties, brown on a large cast iron skillet using coconut oil.

Mix up some cottage cheese and homemade mayonnaise with relish and/or capers for a topping (try dill sometime).
