Barbecue Pizza Sauce

Barbecue Pizza Sauce (adapted from seriouseats.com)

  • Olive oil
  • 1/2 c. onion, finely chopped
  • 2 cloves/2 tsp. garlic, crushed and minced or 1 tsp. garlic powder
  • 2 15 oz. cans diced tomatoes
  • 3 Tbs. tomato paste
  • 1/3 c. rapadura
  • 1/4 c. honey
  • 1/4 c. apple cider vinegar
  • 2 Tbs. molasses
  • 2 tsp. yellow mustard
  • 2 tsp. Worcestershire sauce
  • 1 tsp. dried oregano

Saute onion in olive oil until soft, about 5 min. Stir in garlic, cook until fragrant (about 30 sec). Add in the remaining ingredients. Bring to a boil, reduce heat to low and simmer ~20 min. Use immersion blender to puree until smooth.


Glazed salmon

  • 2- 6oz. salmon fillets
  • 1 tsp. salt
  • pepper
  • 2 garlic cloves, crushed and minced
  • 1 Tbs. mustard
  • 1 Tbs. honey
  • 1 1/2 Tbs. oil (used avocado oil)

Preheat oven to 400 degrees F. Combine the salt, pepper, garlic, mustard, honey, and oil in a bowl and whisk into a paste. When the oven is preheated, preheat a cast iron pan over medium heat. Add a little oil to the pan. Cover the flesh side of the salmon with the paste and place the fish (skin side down) on the pan until brown. Then place pan in the oven and cook until done (check after 5-7 min).



Beets with cider vinegar sauce

Beets with cider vinegar sauce (from Oma)

  • 2 bunches of beets
  • 1/4 c. cider vinegar
  • 1 to 2 tsp. rapadura or ~3 to 5 drops stevia
  • 1 Tbs. olive oil
  • 2 tsp. dijon mustard or 1/2 tsp. dry mustard
  • 1/4 tsp. to 1/2 tsp. sea salt

Remove the beet greens and cook the beets (bake at 400 degrees F in foil for about one hour). When the beets are done, unpeel them and slice. Whisk together vinegar, sweetener of choice, olive oil, mustard, and salt. Pour over the beets and marinate at room temperature for ~30 min. Keep in fridge.
