Winter Garden Salsa

Winter Garden Salsa

  • 2 15oz. cans diced tomatoes (1 drained, 1 not drained)
  • ~10 chile pequins, minced (or 1 jalapeno)
  • 3 garlic cloves, smashed and minced
  • 2 tsp. salt
  • 2 limes, juiced
  • 2 large handfuls cilantro, thick main stems removed (small ok)
  • 2 large handfuls green onions, chopped (or ~1 c.)
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tsp. honey

Place all ingredients in a food processor and process for ~30 seconds or looks uniform throughout.

Honey balsamic dressing

Honey salad dressing

  • 1/4 c. avocado oil
  • 1/4 c. olive oil
  • 1 tsp. sea salt
  • pepper
  • 1/2 tsp. garlic powder
  • 2 Tbs. dijon mustard
  • 1/4 c. balsamic vinegar
  • 6 Tbs. honey

Shake in a glass jar or whisk together in bowl.

Cranberry Sauce

Cranberry Sauce

  • 24 oz. cranberries, fresh or frozen (wrinkled ones removed)
  • 2 pears or apples, diced
  • 1/4 c. orange juice, freshly squeezed
  • 1 Tbs. orange zest
  • 1/2 c. coconut sugar
  • 1/2 c. dried whole cane sugar
  • 1/2 cinnamon stick
  • 1/2 c. honey or 1/2 c. maple syrup

Mix together the cranberries, pears, orange juice, orange zest, coconut sugar, cane sugar, and cinnamon stick in a stovetop pressure cooker. Cook on high for 7 min. Let release naturally for at least 10 min. Open up and stir in the honey or maple syrup.

 

Glazed salmon

  • 2- 6oz. salmon fillets
  • 1 tsp. salt
  • pepper
  • 2 garlic cloves, crushed and minced
  • 1 Tbs. mustard
  • 1 Tbs. honey
  • 1 1/2 Tbs. oil (used avocado oil)

Preheat oven to 400 degrees F. Combine the salt, pepper, garlic, mustard, honey, and oil in a bowl and whisk into a paste. When the oven is preheated, preheat a cast iron pan over medium heat. Add a little oil to the pan. Cover the flesh side of the salmon with the paste and place the fish (skin side down) on the pan until brown. Then place pan in the oven and cook until done (check after 5-7 min).

 

 

Watermelon Limeade

Watermelon Limeade (adapted from allrecipes.com “Watermelon Cooler Slushy”)

  • 4 c. seedless watermelon
  • 1/3 c. lime juice, freshly squeezed (~3 limes)
  • 1 tsp. raw honey
  • 1/8 tsp. sea salt
  • 10 ice cubes

Put ingredients in blender and puree until smooth.
