Green Bean Chickpea Amandine

  • 1/4 c. butter
  • 1/2 to 1 c. slivered or chopped almonds
  • 2 c. chickpeas, cooked
  • 3 cloves garlic, smashed
  • 2 lbs. fresh green beans
  • 2 tsp. lemon zest
  • 2 Tbs. lemon juice
  • 1/4 to 1/2 c. chopped parsley
  • 1 tsp. salt

Melt the butter and saute the almonds and chickpeas for a few minutes. Add the garlic and saute ~30 sec., then add the green beans, lemon, parsley, and salt. Serve over rice&quinoa.

Meat and Tomato Soup

Meat and Tomato Soup (adapted from Venison Italian Soup from allrecipes.com)

  • 1 lb. ground meat (used venison)
  • 1/2 onion, diced
  • 1 large carrot, diced
  • 2 celery, diced
  • 1 (15 oz) can beans (used kidney)
  • 1 c. green beans, cut into 1″ pieces
  • 1 zucchini/squash, diced
  • 1 (15 oz.) can diced tomatoes
  • 1 (15 oz.) can tomato sauce
  • 4 c. broth/water
  • 1 Tbs. beef Better Than Bouillon
  • 2 tsp. dried basil
  • 2 tsp. dried oregano
  • 1 bay leaf
  • 3/4 tsp. sea salt
  • 1 to 2 c. leftover pasta

In a large stovetop pressure cooker, brown the meat. Remove and set aside. Saute the onion, carrot, and celery for a few minutes. Then add the rest of the ingredients except the pasta. Cook at pressure for 6 min. Natural release for 5-10 minutes. Add the pasta while still hot. Optional – add cream to the broth.

Pesto pasta with eggs and green beans

  • 4 oz. bacon, finely diced (optional)
  • olive oil
  • ~8 oz. spaghetti, cooked
  • ~1/4 c. pesto sauce (homemade or Kirkland brand)
  • ~3 to 4 eggs, lightly beaten
  • ~4 to 6 sun-dried tomatoes, finely diced (optional)
  • 1 zucchini, spiralized and chopped (optional)
  • ~3 to 4 c. frozen or fresh green beans, cooked and chopped

Cook the bacon until browned in a little olive oil over low heat. Set aside in a small bowl. Mix the cooked pasta with the eggs, add the zucchini and sun-dried tomatoes. Cook the egg mix in a large pan, stirring often, over low heat until eggs seem firm. Add green beans during or after.

Ground turkey with vegetables stew

  • 1/2 onion, finely diced
  • 1/4 to 1/2 c. okra, sliced or diced
  • olive oil and butter
  • ~1 tsp. sea salt
  • 1 lb. ground turkey
  • basil, thyme, and oregano
  • 1 medium potato, diced
  • 1/2 c. corn kernels
  • 1/2 c. green beans, chopped
  • 1 3/4 c. cannellini beans, cooked
  • 1 c. diced tomatoes
  • 1 Tbs. water
  • 1 Tbs. tamari sauce

Saute the onion and okra in butter and olive oil. Add 1/2 tsp. sea salt. About 3-5 minutes later, add the turkey and cook until brown. Stir in the potato, corn, and green beans and cook a few minutes to saute. Add the beans and tomatoes, water, and tamari sauce. When food starts to simmer, put heat on low and cover. Let stew 15 to 20 minutes.

Green beans with salt pork (from Bon Appetit)

  • 2 lbs. fresh green beans, ends trimmed off
  • 8 oz. salt pork, thinly sliced

Place the greens beans and salt pork in a large pot and add water until covered.  Bring to a boil, then turn heat down to simmer for 1 1/2 to 2 hours.  Add water to keep covered while simmering.

Green beans and potatoes with salad dressing

  • 1 lb. little potatoes (can use small russet), washed
  • 1 lb. fresh green beans (~4 c.), trimmed and cut into bite-sized pieces
  • 1/2 c. Kalamata olives, pitted and halved
  • 1 Tbs. onion, minced
  • 1 Tbs. fresh parsley (or 1 tsp. dried), chopped

Boil the potatoes whole in salted water ~15 to 20 min. (until pierced easily).  Plunge in ice water after cooked.  Slice into bite-sized pieces.  Put green beans in the boiling water used for the potatoes and boil for 2 to 3 min. (until bright green).  Plunge in an ice bath when done.  Combine the potatoes, green beans, olives, onion, and parsley in a large bowl.  Add dressing (below) and serve.  Good with some fresh tomatoes and kids like with cottage cheese.

Feta salad dressing

  • 2 Tbs. red wine, champagne, or sherry vinegar
  • 3 Tbs. olive oil
  • 2 tsp. dijon mustard
  • 2 tsp. lemon juice
  • 2 oz. feta cheese

Wild rice with roasted green beans and cranberries

Wild Rice with roasted green beans and cranberries

  • 1 c. wild rice
  • 2 c. filtered water plus 2 Tbs. kefir or whey
  • 1 lb. green beans, french style or sliced thin and small
  • 1 c. dried cranberries, chopped

Soak the wild rice with 2 c. filtered water and 2 Tbs. kefir for at least 7 hours in a covered pot.  Bring to a boil, skim white stuff off the top, cover and cook over lowest heat setting for 45 min.

Roast the green beans by coating with a little olive oil, kosher salt, and cracked black pepper and bake @ 400 degrees F for 20 to 25 min (stirring once after 10 min) or until they look shriveled and have brown spots.

Put cranberries in the food processor.  Mix together the cranberries, rice, and gbs.  Can add roasted walnuts and feta cheese as well.

To try, vinaigrette:

  • 4 Tbs. olive oil
  • 2 Tbs. apple cider vinegar or red wine vinegar
  • 1/2 tsp. dijon mustard
