Apple Cake

Apple Cake (adapted from Mama 2’s recipe for Apple Cake)

  • 1/2 c. butter
  • 1/2 c. unrefined coconut oil
  • 2 c. flour (used mix of Bob Red Mill’s Gluten Free 1-to-1, einkorn, and spelt)
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 to 1 1/2 c. sugar (used coconut sugar)
  • 1 to 2 tsp. vanilla
  • 2 eggs
  • 3 c. apples, cored and chopped (skins on)
  • 1 c. chopped nuts (used walnuts)

Preheat oven to 350 degrees F. Melt the butter and coconut oil together and set aside to cool. Whisk together the flour, baking soda, and salt in a large bowl. In a medium bowl, stir the nuts and apples together. In the stand up mixer, mix together the sugar, cooled butter and coconut oil, vanilla, and eggs until combined. Slowly add the dry ingredients (flour). Then fold in the apples and nuts. Pour into a 13×9 inch pan. Bake at 350 degrees F for 1 hour.

Pumpkin smoothie

Pumpkin smoothie

  • ~1/2 to 1 c. pumpkin puree
  • 1 c. yogurt
  • 1/2 to 1 c. milk
  • 1 1/2 banana, frozen (bananas are kept frozen in halves)
  • 1 Tbs. sunflower lecithin
  • 1 1/2 Tbs. coconut oil
  • 5 to 6 ice cubes
  • ~1 tsp. vanilla

Deodorant

Deodorant (from wellnessmama.com)

  • 2 Tbs. arrowroot
  • 3 Tbs. baking soda
  • 3 Tbs. coconut oil
  • 2 Tbs. shea butter
  • 20 drops grapefruit essential oil
  • 1 drop tea tree essential oil
  1. Mix arrowroot and baking soda in small bowl.
  2. Melt shea butter and coconut oil in a pan over low heat until barely melted.
  3. Remove from heat and add baking soda and arrowroot.
  4. Mix well.
  5. Add essential oils and pour into a glass container for storage.

Mayonnaise

Mayonnaise

  • 1 egg yolk
  • 1 egg
  • 2 Tbs. lemon juice
  • 1/2 tsp. sea salt
  • 1 Tbs. whey (optional)
  • 1/2 c. “light” olive oil
  • 1/2 c. refined coconut oil

Mix the egg yolk, egg, lemon juice, sea salt, and whey in the food processor for 30 sec.  Add the oil using the drip cup on top of the processor and leave on until mixed throughout.  Adjust flavoring by adding more salt or lemon juice.  If using whey, leave at room temperature in a covered jar for 7 hours, then refrigerate.  Good for up to 2 weeks.
