Green beans with salt pork

Green beans with salt pork (from Bon Appetit)

  • 2 lbs. fresh green beans, ends trimmed off
  • 8 oz. salt pork, thinly sliced

Place the greens beans and salt pork in a large pot and add water until covered.  Bring to a boil, then turn heat down to simmer for 1 1/2 to 2 hours.  Add water to keep covered while simmering.
