Salmon and black bean patties

  • 1 Tbs. butter
  • 1/4 c. onion, finely chopped
  • 2 c. black beans, drained
  • 2 -6 oz. cans of salmon, drained
  • 2 Tbs. lemon juice
  • 2 eggs
  • 1/2 tsp. garlic salt
  • 1/2 tsp. italian seasoning
  • 1 tsp. dried dill
  • 2 tsp. dried parsley
  • 1/2 tsp. sea salt

Saute the onions in the butter, then combine with all the ingredients in a large bowl.  Shape into patties, brown on a large cast iron skillet using coconut oil.

Mix up some cottage cheese and homemade mayonnaise with relish and/or capers for a topping (try dill sometime).
