Tuna Zucchini Cakes

  • 4 to 8 green onions, minced
  • 2 Tbs. butter
  • 2- 6.5 oz tuna packets (water), drained well and flaked
  • 2 c. zucchini, shredded
  • 4 eggs, lightly beaten
  • 2/3 c. fresh parsley, minced
  • 1 Tbs. lemon juice
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1 to 2 c. whole grain bread crumbs
  • 1/2 tsp. italian seasoning
  • 1/4 tsp. garlic powder
  • 4 Tbs. coconut oil

Saute the green onions in the butter.  Mix together with the rest of the ingredients except for the coconut oil.  Make patties and fry in coconut oil on cast iron.
